Cajun Pasta Carnivale is a hearty and tasty pasta dish made with chicken, andouille sausage, Cajun spices, and a creamy sauce. The Cajun flavors go well with the Italian pasta, making a dish that is both filling and tasty.
Ingredients:
- 12 oz penne pasta
- 1 lb chicken breast, sliced
- 1 lb andouille sausage, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup chicken broth
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped for garnish
Instructions:
Cook penne pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium-high heat
Add chicken and sausage slices
Cook until browned, then remove from skillet and set aside
In the same skillet, add diced onions, bell peppers, and minced garlic
Cook until vegetables are softened
Add Cajun seasoning, salt, and pepper
Stir well
Pour in heavy cream and chicken broth
Stir and bring to a simmer
Add cooked pasta, chicken, and sausage back to the skillet
Stir until everything is well combined and heated through
Adjust seasoning if necessary
Garnish with chopped parsley before serving
