Salmon Salad



A healthy and refreshing salad with avocado, mixed greens, tender baked salmon, and a zesty lemon dressing.

Ingredients:

  • 200g fresh salmon fillets
  • 2 cups mixed salad greens
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions:

Warm the oven up to 190C 375F

On a baking sheet that has been lined with parchment paper, put the salmon fillets

Add some olive oil and salt and pepper to taste

Put the salmon in the oven for 12 to 15 minutes, or until it's fully cooked and flaky

After taking the salmon out of the oven, let it cool down a bit

Toss the mixed salad greens, cucumber, red onion, avocado, and cherry tomatoes together in a large bowl

Cut the cooked salmon into small pieces that you can easily eat and add them to the salad

To make the dressing, mix the lemon juice, salt, pepper, olive oil, and olive oil in a small bowl with a whisk

Pour the dressing over the salad and mix it all together

Add fresh dill as a garnish before serving
