Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup warm water
- 2 tablespoons olive oil
- 1/2 cup BBQ sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup red onion, thinly sliced
- 1/2 cup bell peppers, diced
- 1/4 cup fresh cilantro, chopped
- 1 cup cooked and shredded chicken
- Salt and pepper to taste
Instructions:
Put flour, baking powder, and salt in a bowl and mix them together
Mix in the olive oil and warm water until a dough forms
On a floured surface, work the dough into a smooth ball
Split the dough in half, and then roll out each half into a flatbread shape
Warm up the grill over medium-high heat
Spread the flatbreads out and grill them for two to three minutes on each side, or until they get a little brown
Take them off the grill and cover each one with BBQ sauce
Spread the shredded chicken, red onion, bell peppers, cilantro, and mozzarella cheese out evenly
Add pepper and salt to taste
Put the flatbreads back on the grill and cook for another 5 to 7 minutes, until the cheese melts and starts to bubble
Take it off the grill, cut it up, and serve it hot
