With lots of healthy ingredients, this brown rice chicken casserole is cooked to perfection in a slow cooker. The whole family will love this meal because it's good for them and tastes great.
Ingredients:
- 1 cup brown rice
- 1 lb chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup frozen peas
- 1 cup diced carrots
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
Add chicken broth, paprika, thyme, salt, and pepper to the slow cooker
Then add the chopped onion, chopped bell pepper, minced garlic, frozen peas, diced carrots, and chopped chicken
Stir the ingredients together well
Put the lid on top and set the heat to low
Cook for 6 to 8 hours, or until the rice is soft and the chicken is done
Add the shredded cheddar cheese and mix it in until it melts and is fully mixed in about 15 minutes before serving
