Easy to make vegan lentil soup that is cheap, warms you up, and fills you up. This soup is full of healthy foods and is great for a comforting meal.
Ingredients:
- 1 cup dried green lentils
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 cups spinach, chopped
- 2 tablespoons olive oil
Instructions:
Rinse lentils and set aside
In a large pot, saut onions, carrots, and celery in olive oil until softened
Add garlic, cumin, paprika, turmeric, salt, and pepper
Stir for 1-2 minutes
Pour in diced tomatoes and vegetable broth
Bring to a boil
Add lentils, reduce heat, and simmer for 25-30 minutes or until lentils are tender
Stir in chopped spinach and cook until wilted
Adjust seasoning if needed
Serve hot
Optional: garnish with fresh herbs or a squeeze of lemon
