This vegan lentil soup is packed with flavor from the warmth of turmeric and the brightness of lemon. It's a comforting and nutritious dish perfect for chilly days.
Ingredients:
- 1 cup red lentils
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- 4 cups vegetable broth
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion, garlic, carrot, and celery
Saut until vegetables are softened, about 5 minutes
Stir in ground turmeric and cook for another minute
Add red lentils and vegetable broth to the pot
Bring to a boil
Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender
Once lentils are cooked, remove from heat
Stir in lemon juice, and season with salt and pepper to taste
Serve hot, garnished with fresh parsley
